*Trader Joe’s Puff Pastry is a frozen puff pastry that also tends to be a seasonal item, so stock up on it when you find it. It’s easy to store all year because it’s a item that stores well in the freezer.Classic puff pastry will work just fine if you don’t have the Trader Joe’s option, or you could even use a frozen pie crust, although I don’t find that option as good as a traditional puff pastry. I’ve not tried a homemade puff pastry dough recipe, but do know that there are some good ones out there if you are feeling overly adventurous.

This is one of my favorite easy puff pastry recipes – I try to keep the ingredients on my grocery store shopping list so that I have them on hand when I need a quick breakfast or dessert treat!

How to Make these Blueberry Puff Pastries

1. Preheat oven temperature to 425F. In a medium sized bowl, mix together blueberries, cornstarch, sugar, lemon juice, cinnamon and salt. Use a rolling pin to roll the chilled puff pastry sheet out on a floured cutting board or work surface and use a pastry cutter or sharp knife cut into squares. (a pizza cutter works great too!)

*If you are using a full package, you should end up with 8 squares, 4 per sheet of puff pastry. Place the cut pastry squares on to a parchment lined baking sheet.

2. Place a generous amount of the blueberry mixture in the middle of each pasty square. Fold the edges into the middle and pinch the dough together.

3. Melt the butter. Beat the egg and mix the beaten egg with the melted butter to create an egg wash. Use a pastry brush to brush the top and sides of the dough with some beaten egg and butter mixture. Sprinkle the moist area with sugar.

4. Bake for 20 minutes, or until bubbly and golden brown. Serve warm, with whipped cream, ice cream and/or top with powdered sugar.

For savory twists, consider adding a spread of cream cheese under your blueberry topping in each sheet of dough. Other ingredient ideas if you are looking for puff pastry recipe options: brown sugar, heavy cream, bananas or even additional berries – raspberries mixed with blueberries are divine!

Great recipes like this are perfect for quick dessert or breakfast options for a special occasion but they also make a wonderful treat for weekends. I almost always have sheets of puff pastry in the freezer, there are so many wonderful things that you can make with frozen dough and pie dough. I love having it on hand for that reason.

FAQs

What is the secret to puff pastry? ›

Always preheat your oven for a minimum of 15-20 minutes before baking, because Puff Pastry depends on even heat to rise and puff. Place pastries 1 inch apart. If you want a flaky thin and crispy pastry that's not very puffy, prick the unbaked Puff Pastry all over with a fork, which lets steam escape while baking.

Do you bake puff pastry before filling? ›

If you're making a tart or filled Puff Pastry, place it on the baking sheet before adding toppings or fillings. That way, you won't have to transfer the dough with the extra weight and risk tearing it. For extra-thin, crisp Puff Pastry, set a second baking sheet on top of the filled pastry before baking.

What causes puff pastry not to rise? ›

A dull edge can cement layers together and prevent pastry from rising. Always cut Puff Pastry straight down, never on an angle, to prevent layers from sticking together and inhibiting the rise. Cut up and down, and don't drag the knife. You can brush an egg-wash glaze (1 egg plus 1 tsp.

How do you keep puff pastry crisp? ›

Store in an Airtight Container:

Once completely cooled, store the puff pastry in an airtight container. This helps to maintain its crispness by preventing exposure to humidity.

Is egg or milk better for puff pastry? ›

Milk is too runny and will burn but you can add a little to your egg wash to make it a little thinner for coating. Melted butter also burns quite quickly. Egg wash is the most reliable because it coats the pastry evenly and doesn't run off.

Why do you put vinegar in puff pastry? ›

Adding vinegar tenderizes the pastry. It inhibits gluten from forming there by making the pastry tender and flaky.

Do you need to poke holes in puff pastry? ›

Recipe Notes

If you don't want the pastry to puff so dramatically, prick the dough all over with a fork (just like docking a pie crust). After baking, the pastry will be cracker-thin and shatteringly crisp.

What temperature should you cook puff pastry at? ›

About halfway through baking, peek into the oven to see how the pastry is baking. Always bake Puff Pastry Shells in a preheated 425° F oven. Bake Puff Pastry Cups in a preheated 400° F oven for 20 minutes. Do not bake either Shells or Cups in a microwave or toaster oven.

How long to bake puff pastry at 400? ›

Puff pastry can deflate if you introduce cold air into the oven too soon. If you're baking plain puff, place in the middle of your oven and bake for about 6 minutes and then feel free to turn down to about 400 degrees until fully baked and golden, about 15-18 minutes total.

What ingredient makes puff pastry rise? ›

While you set your dough in the oven, the water in the dough forms steam which causes the puff pastry to rise. While the water evaporates the pastry is set in place due to the heat in the oven. Verdict : You need not add yeast, baking powder or baking soda.

How do I keep my bottom puff pastry from getting soggy? ›

Blind-bake your base before adding a filling to help to firm the base and avoid liquid being absorbed into it. Prick the base with a fork to help steam escape, cover with foil or parchment, and weigh it down with ceramic baking beans, uncooked rice or white sugar. Then bake at 220°C (425°F) for 15 minutes.

Can I roll out Pepperidge Farm puff pastry? ›

Use a floured surface to roll out your Puff Pastry sheet, but be sure to brush off excess flour before filling, cutting or folding, since flour will prevent layers from sticking together. When cutting Puff Pastry, the sharper the knife or pastry cutter, the better.

Can I open oven while baking puff pastry? ›

Once forced apart, the fat in the butter or lard cooks each layer of pastry giving the flake. If you open the oven during this process, the puff will deflate and flatten again, so don't open the oven at all during the first 75% of the bake, and then stick to the recommended cooking time.

Is croissant dough the same as puff pastry? ›

Puff pastry is similar to croissants in that it has visible airy layers. However, croissant dough is different from puff pastry because croissant dough contains yeast, but puff pastry does not contain yeast.

Can you open the door on puff pastry? ›

Don't open the door: More than with any other pastry, it's vital that you don't open the oven door too soon or you could end up with flat pastry. This is because the pastry needs the high heat of the oven to stay consistent in order for the water to convert to steam and cause the pastry to puff up.

How do you keep puff pastry from getting soggy on the bottom? ›

One way to prevent soggy bottom pastry is to blind bake the pastry – This means partially or completely bake the pastry before adding the filling. Also, avoid over-filling your pastry.

Is butter or egg better on puff pastry? ›

Egg wash is often used to make toppings on pastries stick. It's also used as a glaze to help the pastry achieve the perfect golden brown color and shine. Butter will not help toppings stick to pastry since it isn't a binder like an egg is, but butter can work in place of an egg wash for some foods.

Do you have to put egg on puff pastry? ›

Not necessarily, puff pastry contains enough fat to produce a golden colour without any extra glazing. However, an egg wash (1 egg whisked with 1 tbsp water or milk) will make it extra golden and shiny. Egg wash is also useful if you need to stick pastry pieces together or seal the pastry.
