this Recipe

This is the time of year where myInstant Potis always on my kitchen counter. Between quick soups for dinner or making a big pot of beans, my pressure cooker is a must-have for simple, weeknight meals.

I’m getting at least 3-4 uses out of it per week; I like to refer to it as my winter work horse. I honestly never thought I would use myInstant Potthat much when I first bought it a few years ago, but here we are. If you haven’t gotten one yetandyou like to eat beans, soups and stews often then I highly recommend grabbing one.

Right now, one of my favorite things to make is thisInstant PotLentil Soup! Packed with vegetables, tomatoes, and lentils, this one is a crowd-pleaser and simple enough for busy weeknights.

Everything You Need to Make this Lentil Soup:

What you’ll need for this Instant Pot Lentil Soup Recipe

You only need a handful of ingredients for this lentil soup recipe, including dried spices, canned tomatoes, dried lentils and fresh parsley.

The best part is that this Instapot lentil soup can be prepared in a short amount of time – making it a perfect busy weeknight dinner.

In addition to olive oil for sautéing the veggies and spices, you’ll need the following vegetables:

  • Medium chopped onion
  • Chopped carrots
  • Celerystalks
  • Minced garlic cloves
  • Fresh chopped spinach. Can also substitute fresh kale or other leafy greens
  • Chopped parsley for stirring into the soup at the end right before serving
  • 1/2 lemon, juiced. Adding a bit of acid with a squeeze of fresh lemon juice at the end of the soup is a game-changer!

Pantry ingredients like:

  • Dried spices: groundcumin, curry powder, dried thyme, smoked paprika and crushed red pepper flakes
  • One large can diced tomatoes with their juice
  • Brown or green lentils
  • Vegetable broth
  • Salt and freshly ground black pepper

I recommend using brown, green or French green lentils. Red lentils can work in lentil soup, but they will lose their shape as soon as they are cooked.

Instant Pot Instructions

Saute the Vegetables

Turn theInstant Poton and hit ‘saute.’ Add the olive oil, onion, carrots, and celery and cook for roughly 5 minutes until vegetables have softened. Sautéing the vegetables first makes a huge difference in adding a layer of flavor, so even though it takes a little more time, I highly recommend doing it.

Mix in the garlic and spices

Add in the garlic and spices, then hit ‘cancel.’ Stir in the tomatoes with their juices, dried lentils, broth, salt, and cover.

Cook on high pressure

Turn the valve to seal, then cook for 15 minutes on high pressure. When done, let the pressure come down naturally for 10-15 minutes. Turn the valve to open to release any leftover steam, then gently remove the cover.

Blend part of the soup

Remove 2 cups of the soup in ablenderand puree until creamy. Alternatively, you can use an immersion blender to puree a few cups of the soup. This step adds more body to the soup without adding in additional cream or dairy.

Finish the soup

Stir in the chopped spinach and place the lib back on. Let sit for 2-3 minutes until the spinach has wilted. To finish, stir in the lemon juice and chopped parsley and serve. If you aren’t vegan, a little parmesan cheese on top is delicious or you can use a plant-based option.

Slow Cooker Directions

To make this lentil soup in a crock pot, saute the vegetables (onion, celery and carrot) first with the olive oil in askillet. Just like with the Instant Pot, this step adds in so much extra flavor to the soup and I recommend doing it.

Add the cooked vegetables to the base of a slow-cooker, spices, tomatoes, lentils, and salt. Cook on high for 4 hours or until lentils are tender.

Before serving, remove 2 cups of the soup and puree until creamy, then add back to theslow cooker. Add in the spinach and stir to wilt. Just before serving, add in the parsley and lemon juice and serve.

How to Make This Lentil Soup on the Stovetop

Like with the other directions for the slow cooker and Instant Pot, start by sautéing the aromatic vegetables (onion, celery and carrot) first with the olive oil in a large stock pan or large pot.

Add in the spices, tomatoes, lentils, salt and bring to a boil. Reduce heat to medium-low and cook until lentils are tender, about 35 minutes. Remove 2 cups of the soup and puree until creamy, then add back to the stock pan.

Stir in the spinach and stir to wilt. Just before serving, add in the parsley and lemon juice and serve!

Refrigerator and Freezer Directions

You can store any leftover soup in the fridge or freezer. Cool the lentil soup completely first, then place it in an airtight container in the refrigerator for 4-5 days or in the freezer for three months.

To cook this lentil soup from frozen, remove the soup from the freezer and thaw it in the fridge overnight. Place the leftover soup in a saucepan over medium-low heat on the stovetop and cook until warmed, adding in more broth as needed.

You can also reheat leftovers in the microwave by placing a small amount of the soup in a bowl and cover with a dish towel, then cook for 60-second intervals, stirring in between, until warmed through.

Frequently Asked Questions

Should lentils be soaked before making soup?

Unlike dried beans, you don’t have to soak your lentils before making lentil soup.

Why are my lentils bland?

Lentils need to be seasoned well so they aren’t bland, as they don’t have much flavor. This recipe ensures a flavorful, delicious lentil soup!

What happens when you overcook lentils?

Lentils can get mushy if you overcook them, this is another reason why I don’t recommend using red lentils, as they break down too much when cooked. Great in some recipes, like my spicy red lentils, but not in lentil soup. Brown or french lentils are best for the desired consistency of this soup.

Health Benefits of Lentils

As a Registered Dietitian, I wish everyone would eat more lentils. They are inexpensive, rich in both protein and fiber, and so good for you. One cup of cooked lentils contains 18g of protein, 15g of fiber and 6.5 mg of iron. This vegan lentil soup is packed with protein and fiber, making it a delicious option for everyone.

Several studies have demonstrated that eating lentils reduces the risk of chronic diseases, including type 2 diabetes, obesity, cancer, and cardiovascular disease.

This vegan lentil soup is for busy weeknights. The times when you are so tired to make dinner, but don’t want to settle for another pantry snack meal of crackers, cheese, hummus and maybe some vegetables.

Not with thisinstant potlentil soup! There’s little that needs to be done besides chopping up a few vegetables. Add in some dried lentils, a can of tomatoes, some spices and ta-da! Dinner is served.

This one is slightly spicy because Ilovespicy food but it’s easily tamed down for those of you who don’t– either reduce or omit the red pepper flakes.

FAQs

Do I need to rinse lentils before making soup? ›

Choosing Your Lentils

The other good news: Lentils don't need to soak as beans do (though you do need to sort and rinse them before cooking). Different types of lentils cook in different amounts of time. Red lentils are the fastest cooking and they dissolve as they cook and make for a smooth soup.

Why is my lentil soup not thick? ›

Cook It Longer

Sometimes soup just needs to simmer longer to reach the perfect consistency. Check to see if the vegetables are tender, and then taste the broth. If the soup tastes a bit watery, give it more time.

How long does homemade lentil soup last? ›

Lentil Soup will easily keep for 5 days in the fridge, making it ideal for cooking on the weekend and serving throughout the week. And it also freezes 100% perfectly for 3 months – even longer!

Can you overcook lentils in soup? ›

Yes, you can overcook lentils; they will become mushy. Much depends on the type of lentil you're using. Some cook quicker and hold their shape better than others. To avoid overcooking them, always follow the cooking directions in your recipe and use the type of lentils called for in the ingredient list.

What happens if I forgot to rinse lentils? ›

It is generally recommended to rinse lentils before cooking them to remove any debris or impurities [1]. However, forgetting to rinse them before adding them to your soup does not necessarily mean that the meal is unsafe to eat.

What happens if you forgot to rinse red lentils? ›

The only risk you have after cooking is encountering small stones that may accidentally remain in the lentils but this is rare. The first time I made a lentil soup, I forgot to rinse the lentils. The worst I can say is that they tasted a little … old and dusty.

What is the white foam on lentil soup? ›

That means the foam will typically appear when making meat-based broths and, to a lesser degree, soups made from high-protein vegetables such as chickpeas and lentils. When those coagulated proteins cluster together, they can create air pockets, which is what causes the “sudsy bubbles,” says Trout.

How do you fix bland lentil soup? ›

Since lentils are starchy, earthy in flavor, and can be on the bland side, there are many ways to make them flavorful, including by adding them into soup. When other ingredients are introduced that complement lentils like onions, garlic, spices, and lemon, the taste is out of this world.

What are the white strands in lentil soup? ›

Those look to be radicles (embryonic stems, the part the root grows from) that have separated from the lentils. If you look closely at the less squished lentils in your soup, you'll probably see some with the radicles still attached.

Why did my lentil soup turn black? ›

the color change you've observed is from oxidation. If you want to prevent this, lay some plastic wrap over the surface of your lentils to prevent air from getting to them, or add some acid, like lime juice, to the recipe.

Is it okay to eat lentil soup everyday? ›

Eating half a cup of cooked lentils gives you lots of essential nutrients and their high fiber content makes you feel full. However, the fiber in lentils can be hard for your body to break down. Eating too many lentils can cause gas, bloating, and cramping.

Is it healthy to eat lentil soup every day? ›

Lentils have plenty of folate, iron and vitamin B1, which also support your heart health. Lentils may be associated with a lower risk of heart disease, by lowering bad cholesterol and blood pressure. One study found that eating lentils led to greater reductions in blood pressure than eating chickpeas, peas or beans.

Is it OK not to rinse lentils? ›

Lentils do not require it but can be soaked in order to reduce cooking time by about half. Before cooking, rinse lentils in cold water, pick over to remove debris or shrivelled lentils, then drain.

How long to rinse lentils before cooking? ›

Swish the water, drain, and repeat until the water runs clear. This usually takes six or seven rinses for red lentils, split peas and moong dhal, and as little as two for green or brown lentils.

What happens if you don't soak lentils before cooking? ›

Why Should You Soak Lentils? Certain pulses have a natural drive of causing gas and bloating in the body. Soaking mimics the natural germination process and changes the seed that is dormant and indigestible into the dal laden with nutrients and complete digestibility.

How important is it to rinse red lentils? ›

It's best to be safe and rinse and sift through them before cooking, because no one wants to break a tooth by biting down on a rock. Follow this tip: Give the lentils a good rinse in a colander to remove any debris and sift through them to be sure there are no hidden stones tucked among the legumes.
