Last night I made one of my favorite weeknight pasta recipes and swapped in Jovial Gluten Free Lasagna that I got in a recent Thrive Market order. TBH - I’m pretty sure Andy has some type of gluten intolerance, so when I can I try to swap in GF options, especially when it comes to pasta. The problem is my husband is an expert detective and can usually taste the difference. Last night he had NO idea and even exclaimed that this was the best version of this recipe yet. ** pats self on the back! **

Ingredients:
3/4 box of Jovial Gluten Free Lasagna (you could even do half but we like to have a little leftovers)
1 Jar of Thrive Market Organic Marinara Pasta
2 tsp. Thrive Market Olive Oil
16 oz Pork Sausage - I used the Jimmy Dean Sage Pork Sausage last night
2 oz of Spinach
2 oz Shredded Mozzarella
3 Garlic Cloves
Red Pepper Flakes (for seasoning)
Dried Oregano (for seasoning)
Instructions:
Pre-heat Broiler (you’ll only be using for a hot second, but it makes the cheese just right!)
Bring medium pot to a boil
Prepare ingredients:
Break noodles in half
Mince garlic
Coarsely chop spinach
Remove Sausage from packaging and place in a bowl: mix in 1 clove of garlic, a few dashes of Oregano, and Red Pepper to your taste preference
Cook noodles until al dente ~ 7 -9 minutes, drain noodles as normal
Cook the Sausage:
Place medium oven-safe pan over medium heat. I prefer to use a cast iron skillet for this!
Add 2 tsp. of olive oil and sausage to hot pan. Stir often, breaking up, until no pink remains.
Make the Sauce:
Add spinach + remaining garlic and stir until spinach is wilted
Stir in marinara and remove from burner
Finish it up:
Stir noodles into the sauce and top with mozzarella
Place pan in the broiler and broil until cheese is melted - approx 2 minutes
Remove, serve, and enjoy!
Honestly this recipe is SO easy peasy and I always feel like a bad ass using the broiler, even if it’s just for a few minutes. It makes me feel like I really know what I’m doing in the kitchen - hah. I’m also thinking one of the reasons Andy really loved this recipe is that the Thrive Marinara is bomb . com. It’s funny how marinara seems like such a basic thing but can actually be done REALLY well OR be super bland!
