When you really want to indulge in some sweets, this is the recipe that you want. Here’s what I used in my cookies. The complete measurements are in the printable recipe at the bottom of this post.

  • Vanilla
  • Butter – it doesn’t matter what type, you can use salted or unsalted
  • Heavy Cream
  • Pecans – save yourself time and buy a bag of chopped pecans. They need to be chopped for this recipe.
  • Dark Baking Chips – Lily’s is my favorite brand. Their chocolate chips have the perfect flavor and are sugar-free.
  • Sugar-free sweetener – I used Swerve granular sweetener, it has the best texture for the cookies.

Freeze-Ahead For Later

One of the biggest distractions and temptations during the fall and winter months are family get-togethers. If you go to one of them, take these cookies with you. This way, you’ll know which dessert you can snack on and avoid all the other treats on the table.

These cookies freeze perfectly! If you want to save them for another day, freeze them on a baking sheet first. This is called “flash freezing.” After you flash freeze the cookies, you can place them in a bag. Label the bag with the recipe name and date. These cookies will last about 3 months in the freezer.

1. In a saucepan, brown butter but do not burn it. Medium heat.
