  1. Combine the chocolate coating ingredients. Meanwhile, combine 3 cups of chocolate chips and 1 ½ teaspoons of shortening in a microwave-safe bowl.
  2. Microwave chocolate. Microwave the chocolate for 30 seconds and then stir. Continue to heat the chocolate in 15-second increments, stirring in between each one, until melted and smooth.
  3. Cover candy with chocolate. Remove the chilled candy from the fridge and dip each ball into the melted chocolate, using a fork to flip the candy over, making sure to coat the candy entirely. Then, place the chocolate-coated balls back onto the baking sheet.
  4. Set chocolate. Place the baking sheets back into the refrigerator until the chocolate has set.

Chocolate billionaires would make a wonderful addition to any sort of gift basket for sharing! Serve along with other festive treats like my reindeer chow and chocolate frosting fudge! Enjoy!

💭 Angela's Tips & Recipe Notes

  • While a teaspoon may seem like a small amount, it is really all you need for each candy. Once you dunk them in the chocolate, they will get larger. You can use a small cookie scoop or melon baller for easy scooping!
  • You can check out myguide for melting chocolate chipsfor more information!
  • If you want more Rice Krispies than pecans, you can swap the amount and use 1½ cups of Rice Krispies and 1 cup of pecans. Feel free to adjust the amounts to your liking, as long as they total 2½ cups between the two of them.
  • I recommend using a high-quality brand for your chocolate chips, like Ghirardelli.

Hi, I'd love to make these for Christmas &, as I am in Australia, we don't have Kraft caramels . Are the caramels soft or hard n crunchy as we have different versions? Could I use eating chocolate too as our chocolate chips here taste waxy? Ta

    • Angela @ BakeItWithLove.com says

You'll want the soft caramels. For the chocolate, i would opt for bakers chocolate bars if available. Eating chocolate tends to be milk chocolate, so if that's what you can get look for 70% cocao chocolate. Good luck and let me know if you have any other questions!

FAQs

What is the best chocolate to use for homemade chocolates? ›

Some Recommended Chocolate Brands

I personally like to use Callebaut, Cacao Barry, and Guittard for more casual baking (or projects where I have a smaller budget), and Valrhona for those times when I really want the chocolate flavor to shine and be the star.

What is the difference between coating chocolate and melting chocolate? ›

Real chocolate contains cocoa butter, while candy coating contains other natural oils such as palm kernel oil. Real chocolate requires tempering before it can be used. While real chocolate requires tempering, candy coating may be melted, molded and allowed to set, it's that easy.

What chocolate do professionals use? ›

Couverture is basically a fancy way to say 'professional chocolate' or 'coating chocolate,'” says Rashanda Cobbins, food editor here at Taste of Home. This type of chocolate contains the same ingredients as your standard bar but has a higher percentage of fat from cocoa butter.

What sugar is best for homemade chocolate? ›

In the fine chocolate industry, the preferred choice is CANE SUGAR. Extracted from the sugarcane plant that is largely grown in Central and South America, this type of sugar is especially popular among bean-to-bar makers. It caramelizes very well and doesn't interfere with the flavor of cacao.

What should you not do when melting chocolate? ›

Be sure that your work surface, pans, and tools are absolutely dry before melting chocolate. Even a drop of water or other liquid can cause chocolate to seize up.

What type of chocolate is best for melting? ›

Choosing your chocolate

Chocolate melts faster the higher the percentage of cocoa butter and fat, so dark chocolate melts the fastest. Once melted, it's glossy and has a good viscosity. Good-quality dark chocolate with no less than 70 per cent cocoa solids will leave you with a darker, richer flavour.

Can you use regular chocolate chips as melting chocolate? ›

Because chocolate chips contain soy lecithin, a food additive that helps them retain their shape when they're baked, they might not melt as smoothly as chocolate bars. But if they're the only thing you have on hand, or if you're going for convenience, they're a good choice because they're already cut to size.

What chocolate do chocolatiers use? ›

For all these reasons, couverture chocolate is ideal for coating chocolate bonbons and gateaux. Couverture is used by chocolatiers to coat their Christmas chocolates, for example, but it can also be enjoyed as a bar or a square.

What type of chocolate is good for making candy? ›

Couverture, or chocolate formulated with a higher percentage of cocoa butter, is essential for making chocolate bonbons, says Ocean House Collection pastry chef Maya Hayes. "Make sure you are using bars, chunks, or callets, not chocolate chips," she says.
